You should have a button on the dash, near the Infotainment system. It is enabled by default and reverts to that every time you start the car.
you can also buy adapters to permanently disable it, search the threads here, there are links. I think most buy from Amazon and it's @ $15. It takes just a few seconds to install, under the hood at the front near the hood latch.

If your Equinox is operating properly and well maintained, auto stop/start won't cause you any problems. If it is causing you problems, you've got other issues. Start by scanning all 4 computer systems.
Moonwink... in my case, it's not that it caused me any "problems". It's that the feature annoyed me, and I wanted a way to disable it without having to push the little button every single time I started my car. I don't believe the OP mentioned any problems either, he simply asked if the feature could be disabled.

I've had an Amazon purchased $10 auto stop/start bypass harness installed on my 2021 equinox 1.5 since I bought the vehicle a year ago. It works, doesn't set any codes and all other features still work like the hood open warning, remote start, etc
I am another one who can't stand A/S/S. Not only is it annoying , It doesn't do anything good to the vehicle electrically and mechanically over the long haul.
Moonwink, 2018 Nox .... I would pull into my garage, stop, engine turns off, put it in park, engine starts, then I turn it off! Doesn't get more annoying than that. I bought the bypass adaptor on Sc-Amazon for about $20. Easily installed in lass than ten minutes. Now I decide when the engine stops!

My 20 yr/old son drives my 2016 Malibu (2015 body style). It has A/S/S that I have not been able to defeat and does not have an off button. The amazon bypass harnesses work on 8th gen mailbus, but set the check engine light for hood switch malfunction.
Anyway... Every time he pulls into his spot in the driveway, the engine stops and then restarts as he positions the vehicle. This cycling does nothing good for the vehicle.

On My 2018 it doesn't shutdown that quick. Never have a real problem with it. Hardly ever shuts down in winter or when the AC is on. I think it shuts down like you described when putting it in the garage at least some of the time
