Did you try connecting through Bluetooth? You'll need both Bluetooth and WiFi turned on.
Try restarting your phone (manually turn it off/on). Make sure Siri is turned on and check to make sure CarPlay isn't restricted in Content & Privacy Restrictions. Then go into CarPlay and try setup again...

Are you buying from a dealership or private seller? If you're buying from a dealership you can check the trade-in value of that Equinox on KBB and see how much more you're paying. I'd also check various sites for a similar vehicle and use those vehicles as a bargaining chip with the seller. KBB...
My dad's Ford Escape auto start had a noticeable delay every time you tried to hit the gas, I found that very annoying. The Equinox doesn't seem as bad to me. Still, I think it's dumb there isn't a way for the owner to choose if they want it on/off without having to buy an aftermarket component.
